The brand new 5* Santo Mine Oia Suites hotel is located in the magnificent Oia, on the site of an old stone mine. With unobstructed views of the Aegean Sea and the unique sunset of Santorini, Santo Mine opened for the first time on 20 April 2024.

Wild volcanic landscape, earthy tones, Mediterranean aesthetics and Cycladic minimalism are some of the tiles that compose the minimalist architectural mosaic of the hotel, drawing inspiration from the natural environment of Santorini.

Santo Mine’s philosophy focuses on travellers who seek authentic experiences, love exploration and cherish contrasts and true moments that are bursting with energy.

Santo Mine’s 37 suites are designed to embrace the colours, air and light of Santorini. The use of raw materials such as stone, wood and marble highlight the atmosphere of Mediterranean simplicity that permeates throughout Santo Mine’s facilities.

Each suite has a private swimming pool and/or Jacuzzi with a view of the Aegean Sea and the unique sunset of the island, which shines like an extension of the hotel.

The Ālme Restaurant, which borrows its name from the word “brine” as a tribute to its salty mysteries, is a delicious hymn to the treasures offered by the sea. Santo Mine’s restaurant offers a fine dining experience with a selection of fresh and local fish cooked using the “dry aging” method, which makes the fish more mellow in taste, giving it a crispier texture. And many of the products that accompany the dishes at Ālme Restaurant are either home-grown in the hotel’s gardens or from its network of sustainable suppliers. At the same time, Santo Mine puts the ethical philosophy of “zero waste” into practice and materials such as fish scales, skins and bones are reused in different preparations.

Rhoē Wine Bar & More is a “living canvas” of a plethora of flavours that can be enjoyed by the Santo Mine pool, with food and drink options for all day with the blue hues of the Aegean Sea as a backdrop, and for nights under the stars. Travelers will even have the opportunity to enjoy open-air retro movie nights, in a specially designed area of the hotel.

For wine lovers, Santo Mine also has a wine cellar. Guests who want to discover the historic vineyard land & the native varieties of Santorini’s rare volcanic soil will find here the ultimate destination.
